Description

Addzyme 950® is a blend of food grade enzymes brought by ‘Advanced Enzymes’ to help improve the overall properties of bread in an easy-to-use tablet form. it has active ingredients of proprietary enzyme blend and comes in effervescent tablet form which is readily soluble in water. Addzyme 950® acts on the flour starch, releasing simple sugars to oligosaccharides with dp ranging from 2 to 7. Addzymes 950® action results in specific hydrolysis of amylopectins which helps to reduce retrogradation tendency of starch, resulting in softer baked goods with prolonged shelf life.

One Addzyme 950® tablet is recommended to be applied for 50 to 70 kg flour. this however is only indicative, we recommend for the best result that bakers carry out bench scale bake tests using Addzyme 950®, before making any baking recommendations.

Working Principle

  • Addzyme 950 acts on the flour starch, releasing simple sugars to oligosaccharides with DP ranging from 2 to 7. Addzymes 950 action results in specific hydrolysis of amylopectins which helps to reduce retrogradation tendency of starch, resulting in softer baked goods with prolonged shelf life.

Use Guidelines with Dose

One Addzyme 950 tablet is recommended to be applied for 50 to 70 kg flour. This however is only indicative, we recommend that bakers carry out bench scale bake tests using Addzyme 950, before making any baking recommendations.

Safety and Handling Precautions

Enzymes are proteins, Inhalation of dust or aerosols may induce sensitization and may cause allergic reactions in sensitized individuals. Some enzymes may irritate the skin, eyes, and mucous membranes upon prolonged contact. Avoid unnecessary contact with the product and inhalation of any aerosols or dust particles. In case of spillage or contact with the eyes or skin, rinse the affected area promptly with plenty of water.

All spills, however minor, should be removed immediately. Use respiratory protection, major spills should be carefully shoveled into plastic-lined containers. Minor spills and remains of major spills should be removed by vacuum cleaning or flushing with water (avoid splashing) and wash contaminated clothes. and take 20 ml from it and add to 10 kg flour.

and take 2.8 ml from it and add to 2 kg flour.

and take 14 ml from it and add to 10 kg flour.
